I'm back!

So I have been super busy and was about to give up totally on this blog when my sister in law called and left me a very inspirational message full of awesome ideas! Her blog is wonderful and she has encouraged me to keep going so I AM BACK!
I am excited to report that I have lost a total of nine pounds! This is, of coarse not  without  fluctuations but I am now almost half way to my goal. I am seeing that it is absolutely true that you have to exercise AND watch what you eat! Doing just one or the other yields no results for me. Ahhh how I miss the days of continuing to eat as I please and just exercise a tiny bit and the pounds melt away!
Another positive change in the circus I lovingly refer to as my life, is I have taken the reins of discipline over in my house and I am seeing positive changes!  Jeff has always been the disciplinarian and I have given him little to no support. I was always trying to sooth things over and keep everyone happy. However,  I recently had a terrible experience trying to take the girls to the circus (the real circus) and an incident where Delaney's anger got the best of her (and me for that matter) and I decided that some things had to change!
So after spending an entire Saturday night on the internet researching discipline techniques and watching multiple episodes of Supernanny, I sat down and  read the New York Times Best Seller  called "Have a new kid by Friday" by Dr. Kevin Leman. And decided to try it out.
It is changing our lives! It also has not been without some fluctuations but overall I am encouraged. Have a New Kid by Friday shows parents how to reverse negative behavior in their children--fast! With his signature wit and encouragement, Dr. Leman offers hope and real, practical, doable strategies for regaining control and becoming the parents you've always wanted to be. Anyone can do it. All it takes is you deciding to stand up and take charge. 
Well, I was inspired! I wanted to stand up and take charge! So I did! It has been two weeks and my in laws have agreed that they also see positive changes! 
So say a prayer for me that  I can continue to regain control of my house and continue the positive impact this is having on their attitude and behavior!

Ready to work out!!!

I am about to start my first 5am workout! BUt before I start I wanted to share this site. Sparkpeople.com I am going to try to list the badge but I am new to this so bear with me! It has tons of fabulous recipes. I am going to add one here that was absolutely to die for!!!!!! The white chicken chili I posted earlier was awesome!!!! So give it a try and let me know what you think. I am also going to enlist my husband to help me make this blog a bit more interesting and not so bland.
I am proud to say that I have lost 7 pounds so far!!!!! Only 20 more left to go!!!! My cousin Susan has lost 3 pounds (she started after me) and is my biggest inspiration!!!!!! So be praying for her and cheering her on also!!!!

Slow Cooker Creamy Italian Chicken

Just to clarify for the questions below:
First, YES the cream cheese is figured into the totals...if you use FULL FAT cream cheese, the fat content will be considerably higher. But low fat cream cheese really takes the fat down.

Second, I haven't ever tried it with regular Italian dressing...let me know how it turns out!

Third, I HIGHLY recommend using the low setting for cooking...it allows the juices from the chicken to really seep into the dressing.

Number of Servings: 6

Ingredients

    *2 lbs boneless, skinless chicken breasts *1 pkg Good Seasons Italian dressing mix * 1/4 cup water * 1 8oz pkg low fat cream cheese *1 can 98% fat free cream of chicken soup *3 cups cooked white, long grain rice


Directions

*1. Place chicken in crock pot
*2. Mix together Italian dressing mix and water. Pour over chicken.
*3. Cover and cook on high for 4 hours OR low for 8 hours.
*4. Mix together cream cheese and soup in separate bowl.
*5. Carefully remove chicken from crock pot to plate.
*6. Pour cream cheese/soup mixture into crock pot and mix together with dressing in bottom.
*7. Return chicken to crock pot and mix gently to shred the chicken.
*8. Cook on LOW until heated through.
*Serve with rice or noodles.

**You may add skim or low fat milk in very small quantities to thin the sauce a little. It does not significantly affect the nutritional value if you use up to 2 tablespoons**

Makes 6 servings. Approximately 2/3 cup mixture with 1/2 cup rice.

This recipe can be made with FAT FREE cream cheese and it saves about 6 grams of fat. However, I feel that the dish benefits from the flavor of the low fat over the fat free.

So 4 kids and work don't leave me much time but I have been working out and eating healthy! We tried the chicken chili and it was delicious! We also tried the following recipe which was fabulous!!!! We used pasta instead of rice.

Working It All Out

Well I am happy to say that I CAN make it to Planet Fitness and back to work in an hour. Today I did the 30 minute circuit! If you havn't been to Planet Fitness in Corpus you should go check it out! They have everything you need for a successful workout!!!!! They have a 30 minute circuit which I will do Monday, Wednesday and Friday. And they have a 12 minute ab workout which I will combine with some elliptical work on Tuesdays and Thursday. I had forgotten how much I like to work out!!! I just hope I can move tomorrow!!!!!

White Chicken Chili

I haven't tried this but I think it sounds sooo yummy! And it's only 226 calories per serving!!!!

INGREDIENTS
1 T olive oil
2 lbs (32 oz) chicken breasts, boneless and skinless, diced into 1-inch cubes
1 onion, diced
3 cloves garlic, grated
1 t salt
1 t ground cumin
1/2 t chili powder
1/8 t cloves, ground
1/8 t cayenne pepper
4 (15.5 oz cans) cannellini (white kidney) beans, drained and rinsed
28 oz chicken stock, low sodium
2 c corn, frozen
2 (4 oz cans) green chilis
1 lime
3/4 c low fat, shredded monterey jack cheese 



DIRECTIONS
Heat oil in a heavy saucepan over medium heat. Add chicken and onion. Cook until chicken is no longer pink, about 5-7 minutes. Add garlic cloves and spices, continue to cook for 1-2 minutes. Add beans and stock. Stir and simmer for 25 minutes. Add corn and green chilis , continue to simmer for 5 minutes. Remove from heat and squeeze lime into chili. Serve with 1 tablespoon of cheese per cup of soup.
If you prefer a thicker chili, puree 1/4 of the soup before you add the corn.

All things Kiran

So I weighed my self today and the scale says I lost 5 pounds. This puts me (almost) back to where I started before the cruise! But still leaves me a long way from my goal! I have cut down on sweets (not an easy task with my family around the holidays) and I am eating smaller portions. I ALWAYS lose alot the first week I try to lose weight so the big test is seeing if it will continue.
My brother is down this week with his beautiful wife and their new baby. He is sooooo adorable!!!!! And such a sweet baby. I am going to try and post a picture but I am still figuring out this blog so bear with me. I also have some recipes I want to post so I will attempt this later in the week.
